• On the Menu: Vegan Strawberry Waffles


    How we do weekend breakfast: get our recipe for the best vegan waffles, easy to whip up in any size kitchen.

    Ingredients:

    For pancakes:
    1.25 cup unbleached all-purpose flour
    2 tbsp. white sugar
    2 tsp. baking powder 
    .5 tsp. salt
    1.25 cup water
    1 tbsp. oil


    Toppings:
    Use whatever you like! 
    We used strawberries, cacao nibs, and bananas
    Other ideas: vanilla bean, cinnamon, chocolate chips, (vegan) bacon for a sweet-savory combination, blueberries or other fruits that are in season, powdered sugar (as a topping)…the possibilities are endless!


    Directions: 
    Sift the flour, sugar, baking powder, and salt into a large bowl. 


    Whisk the water and oil together in a small bowl. 

    Make a well in the center of the dry ingredients, and pour in the wet. Stir just until blended; mixture will be lumpy.


    Heat your waffle maker over medium-high heat — we love this mini waffle maker. 


    Fill the waffle maker, and cook until the light signifies that your waffle is ready! 


    Add toppings of choice, then dig in. Breakfast is served!
