• On the Menu: Spiced Pear Bourbon Cocktail

    We’re upgrading our cocktail game by adding in (and making our own!) bitters, thanks to the new kits from NYC’s Hella Bitters, which make mixing up the perfect fall cocktail easy and fun. Read on for the recipe we’ll be making all season long: a spicy, sweet, and cozy pear and bourbon cocktail, made by Jayme Henderson from Holly & Flora.  

    If you're unfamiliar with bitters, Jayme explains that "Adding a dash of bitters to any cocktail is often that final touch that produces a cohesive cocktail." She made both versions of bitters from the Hella Bitters Craft Your Own Bitters Kit, but this recipe uses their aromatic blend to deepen the notes in this particular recipe, providing a savory note. 

    The bitters-making process is super easy; you just need a little patience to wait for the final product. Add the Hella Bitters aromatic blend of herbs and spices to eight ounces of bourbon and let the mixture age a month. After a few tastes along the way, to make sure the flavors have integrated, strain off the solids and bottle it. Along with this cocktail, keep it around for other fall drinks like Manhattans and Old Fashioneds.

    Spiced Pear Bourbon Cocktail
    Makes one cocktail

    1 1/2 ounces bourbon
    1 1/2 ounces pear purée (recipe below)
    1/4 ounce ginger liqueur
    1/4 ounce agave nectar
    1/2 ounce freshly squeezed lemon juice
    1/4 teaspoon allspice dram
    Soda water to taste
    2-3 dashes Hella Bitters Aromatic Bitters (from the Craft Your Own Bitters Kit)
    Freshly cut thyme or sage sprigs for garnish

    In a mixing tin or cocktail shaker, add the bourbon, pear purée, ginger liqueur, agave nectar, lemon juice, and allspice dram. 

    Fill with ice, shake well, and strain into a cocktail glass, filled with fresh ice.

    Add soda to taste and give 2-3 shakes of Hella Bitters Aromatic Bitters.

    Gently smack the fresh herbs to release their aromatics and place them in the finished cocktail. 

    For the pear purée:
    Peel, core, and coarsely chop 3 pears. Purée the chopped pears and 2 ounces of lemon juice in a blender until smooth. Strain and press the pear mixture through a fine-mesh strainer or chinois, discarding the remaining solids. This mixture yields enough to make 4-5 cocktails.
