• On the Menu: Tomato Avocado Tartines


    Is avocado toast the most Instagrammed food of all time? Probably. Here’s one more contribution. If you’re not making avo toast for breakfast (or lunch, or dinner, or for any occasion ever)…why not?! We teamed up with Kourtney Jackson for her variation, which adds a couple last-minute ingredients to turn it up a notch. She credits her version to her sister, who also posted the recipe on her food blog MK Eats. Healthy, cheap, and easy, avocado + bread is the perfect combination. What are you waiting for?

    Ingredients:
    1-2 slices of your favorite bread (gluten free, sourdough, whole grain).
    1 avocado
    1/2 lime, juiced
    Garlic salt
     
    Additions (options here are limitless), these are faves:
    Heirloom tomatoes (from the farmers’ market please!)
    Egg (cooked in coconut oil)
    Coarse sea salt 


    Directions:
    In a small bowl, mash avocado and add lime juice and about 1/4 tsp. garlic salt (or salt to taste). 

    Toast bread. 

    If you're going to top it with an egg, spray a skillet with coconut oil and heat on medium for 2 minutes. Add eggs and cook 2-3 more minutes. Sprinkle with a little kosher salt. 

    Slice tomatoes. Spoon avocado on toast and top with egg and/or tomatoes. Sprinkle with a little more sea salt and a squeeze of lime.


    Topping options here are pretty limitless. Our other favorites to pair with smashed avocado are:
    -Pesto and goat cheese
    -Smoked salmon and red onion (it's the new bagel and lox)
    -Toasted pumpkin seeds and red pepper flakes
    -Feta cheese, shaved radishes, alfalfa sprouts, and a squeeze of lemon
