• On the Menu: Spring Soba Noodles with Veggies


    Our ideal spring menu is all about quick and fresh: aka, a dinner that comes together in 20 minutes (and still tastes amazing) sounds about perfect. Our new go-to is this soba bowl from Straight from the Earth, freshened up with a ton of in-season ingredients and topped with a peanut sauce that is straight-up amazing. We teamed up with blogger Jessie Snyder from Faring Well to make it happen. Read on and get ready to head to the farmers' market!

    Soba Noodles with Edamame, Carrots, and Green Onions in Peanut Sauce
    Ingredients
    For Peanut Sauce
    1/2 cup peanut butter (any variety — salted or unsalted, creamy or crunchy)
    1/2 cup very hot water (about 180 F)
    1 tbsp. plus 2 tsp. tamari sauce
    1 tbsp. apple cider vinegar
    1 tbsp. finely chopped fresh mint
    1 tbsp. finely chopped fresh basil
    1 tbsp. agave nectar
    1 tsp. rice vinegar
    1/2 tsp. salt
    1/4 tsp. garlic powder
    1/4 tsp. ground ginger
    1/8 tsp. cayenne pepper
    1/8 tsp. pure ground chipotle chile


    For Noodle Bowl
    2 tbsp. extra-virgin olive oil
    10 cloves garlic, slivered
    2 medium carrots, thinly sliced
    1 cup shelled, cooked edamame
    10 oz buckwheat soba noodles
    Salt and pepper, to taste
    1/4 cup thinly sliced green onions (both white and green parts), for garnishing
    1/2 cup roasted peanuts, chopped, for garnishing


    Instructions
    To make the peanut sauce, stir together peanut butter and hot water in a small bowl until smooth. Stir in the tamari, cider vinegar, mint, basil, agave, rice vinegar, salt, garlic powder, ginger, cayenne, and chipotle until thoroughly combined. Set aside at room temperature. 


    Warm the oil in a large saucepan over medium heat. Add the garlic and cook, stirring constantly, for 1 minute, making sure it does not burn. Add the carrots and cook, stirring frequently, until they are crisp-tender, about 5 minutes. Remove the pan from the heat and stir in the edamame. 


    Bring a large pot of water to a boil over high heat and cook the soba noodles according to the package directions. Drain the noodles and add them to the saucepan with the vegetables. Add the peanut sauce and toss to combine. Season with salt and pepper. Serve warm or cold, garnished with the green onions and peanuts. We've been making this for dinner and eating it through the week...tastes even better the next day (preferably eaten outside in the sun...)
