• On the Menu: Dorm Cooking - Mac & Cheese 2 Ways


    Who doesn’t love mac and cheese? We're sharing a base recipe for mac and cheese that can be changed up and personalized depending on your mood. Bonus: if you have a small kitchen or are living in a dorm, then this recipe is for you. (Best of all, it's a lighter version of the classic.) Haley Hunt Davis of Brewing Happiness brings you this amazing recipe, so gather your ingredients, some friends to share with, and get cooking!  



    Mac & Cheese 2 Ways 
    serves: 2-3 
    time: 12-15 minutes  

    Ingredients:
    -1 box macaroni noodles 
    -6 cups water 
    -1/2 cup non dairy milk 
    -3 tablespoons non dairy butter 
    -5 tablespoons nutritional yeast 
    -1 teaspoon white miso paste 
    -1/2 teaspoon turmeric powder 
    -1/4 teaspoon garlic powder 
    -1/4 teaspoon onion powder 
    -1/4 teaspoon salt 
    -1/8 teaspoon pepper  

    Cheesy broccoli mac add-ins: 
    -2 cups broccoli florets  
    -3 tablespoons water 
    -2 tablespoons parmesan, finely grated 
    -1 tablespoon breadcrumbs   

    Brussels sprouts, pickled jalapeno and avocado mac add-ins: 
    -1 heaping cup baby brussels sprouts, cut in half 
    -1/2 cup water 
    -1/3 cup pickled jalapeños, diced 
    -1/2 avocado, sliced 


    1. In a medium to large sized pot, heat 6 cups of water over high heat until boiling.

    2. Once boiling, add in your macaroni noodles - stir - and allow to rapidly boil for 7-9 minutes.  

    3. While your macaroni noodles are cooking, add your broccoli OR your brussels sprouts to a microwave safe bowl. Add in either 3 tablespoons or 1/2 cup of water, depending on which kind of mac ’n cheese you want to make. Top with a microwave safe lid and microwave on high for 3-4 minutes. 



    4. When your noodles are done cooking, drain out the excess water and transfer the noodles back into your pot.  

    5. Add in all other ingredients (ie. non dairy milk, non dairy butter, nutritional yeast, etc.) 

    6. Mix together until the noodles are covered evenly in a cheese-like sauce. 



    7. If you are making cheesy broccoli mac, stir in your cooked and drained broccoli and top with a sprinkle of parmesan cheese and breadcrumbs. 

    8. If you are making brussels sprouts, pickled jalapeño, and avocado mac, stir in your cooked and drained brussels sprouts and drained pickled jalapeños. Top with avocado slices. 

    9. Eat up!
